Step 1: In a small bowl, whisk the milk (1/2 cup), the vanilla (1/2 teaspoon) and the egg (1) together to combine.
Step 2: Then, mix in the sugar (1/4 cup) and the cinnamon (1/4 teaspoon), and whisk until homogenous.
Step 3: Finally, add in the breadcrumbs (1 cup) to soak in the mixture, and set aside. Reserve the banana slices for the final assembly, and move on to make the cake.
Step 4: Preheat oven to 350F/180C.
Step 5: Grease a 10 inch pie plate, or cake pan with butter, or cooking spray - set aside.
Step 6: In a medium bowl, add in the breadcrumbs, the cinnamon (1 teaspoon), the baking powder (2 teaspoons) and the pinch of salt - whisk to combine and set aside.
Step 7: Next, add the bananas, the milk (1 cup), the sugar (1 cup), and the oil (1/2 cup) to a blender, and pulse to combine. Then, add in the eggs (3) and the vanilla (1 teaspoon), and pulse a few more times.
Step 8: Pour the liquid mixture over the bowl with the breadcrumbs mixture and gently fold using a silicone spatula until fully incorporated. Don't forget to scrape the sides of the bowl, too.
Step 9: Pour the batter into the greased pan, then using a slotted spoon to drain excess liquid, scoop the crumb topping and place it on top of the batter.
Step 10: Arrange the banana (1/2) slices on top, and sprinkle with a little cinnamon and sugar.
Step 11: Bake until a cake tester/toothpick inserted to the middle comes out lightly crumbly to clean (about 30 mins).
Step 12: While the bread cake bakes, make the caramel sauce.
Step 13: Add the sugar (1/2 cup) and the water (1/2 cup) to a small saucepan over medium to high heat. Bring it to a simmer, and let it simmer until it turns into a light gold color. Be sure to watch the pan at all times to avoid burning the sugar, and never, ever, ever stir it.
Step 14: When the sugar is light gold color, turn off the heat, and immediately after, carefully pour in the butter (2 tablespoons), the vanilla (1/2 teaspoon), the cinnamon (1/4 teaspoon) and the cream (2 tablespoons). Stir to combine and set aside.
Step 15: When the cake is done baking, remove it from the oven and place the pan over a cooling rack.
Step 16: Drizzle the caramel sauce over the bread cake while it's still hot.
