Step 1: Optional: boil a pot of water and blanch the cut pork (500 gram) for about 3 minutes to remove scum, then drain and set aside. If skipping this blanch, set the cut raw pork aside for the stew.
Step 2: Drain the 450 g firm or extra-firm tofu and cut it into 8 pieces. Heat a little oil in a non-stick or well-seasoned cast-iron pan, pan-fry the tofu until golden, and set aside.
Step 3: Cook pork: Boil 4 cups water, pork, garlic (1 head), and white peppercorns (1 tablespoon). Reduce heat to a simmer and cook for 30 minutes.
Step 4: Cook tofu: Add tofu, light/regular soy sauce (4 tablespoon), sweet soy sauce, dark soy sauce (1 tablespoon), and sugar (1 tablespoon). Cover the pot, reduce the heat, and simmer for 30 minutes or until the pork is tender.
Step 5: Add the 8 peeled, ready hard-boiled eggs (8) and simmer for another 15 minutes. Taste and add a little salt or extra sugar only if needed.
Step 6: Turn off the heat and serve the finished stew immediately with optional ready steamed white rice.
