  1. Step 1: Dice the chicken breast (1) and mix it with ½ tsp sesame oil, 1 tsp soy sauce, 1 tsp oil and 1½ tsp cornstarch. Marinate for 15 minutes in the refrigerator. Meanwhile chop the onion, finely dice the bone-free salt-cured fish, chop the lettuce and scallion, and have all cooked rice and remaining seasonings ready before heating the wok.

Marinate diced chicken · 15 minUses 1 chicken breast, diced · ½ tsp sesame oil for chicken marinade · 1 tsp soy sauce for chicken marinade · 1 tsp oil for chicken marinade · 1½ tsp cornstarch for chicken marinade

  2. Step 2: Heat 1 tbsp of the wok oil over very high heat. Add all the marinated chicken from step 1, sear until lightly browned, then lift it out into a bowl. Return it to the wok later to finish cooking; keep this pause brief.

  3. Step 3: In the hot wok from step 2, heat the remaining 2 tbsp wok oil over very high heat. Add all the chopped half-onion (½) and stir-fry until translucent.

Uses Hot onion and salt-cured fish with wok oil · 4–5 cups cooked rice · All reserved lightly browned chicken pieces

  6. Step 6: Add all 1 tbsp Shaoxing wine and 1 tsp finishing sesame oil to the hot rice and fully cooked chicken from step 5. Taste and add salt only as needed because the cured fish is salty. Stir-fry for another minute.
