Method10 steps · about 25 min

  1. Step 1: Blanch the scallions (8), then cut them into 5 cm (2 inch) lengths. Cut the carrot (¼) into sticks and halve the green beans (8); parboil them in water until tender-crisp, drain and set aside.

Uses 8 Blanched scallions · ¼ carrots (Parboiled *2) · 8 green beans (Parboiled ) · Water, enough to blanch the vegetables

  2. Step 2: Lay the thinly slice beef on a chopping board and place prepared scallions and vegetables on the beef then tightly roll it up. The beef strip should be about 20cm (8 inch) long. If the meat is shorter than that, overwrap beef slices slightly to make it 20cm (8 inch) long.

Uses Some of the thinly sliced beef · Some blanched vegetables

  3. Step 3: You can secure by using a toothpick to tie the end of the meat (optional)

    Uses First assembled beef roll

  4. Step 4: Repeat this same process until all the beef is used (I made about 8 negimaki out of 300 g beef)

Uses Remaining thinly sliced beef · Remaining blanched vegetables · First beef roll

  5. Step 5: Cover the roll ups with flour (1 tbs).

Uses All eight assembled beef rolls · 1 tbs plain flour or potato starch(Katakuriko)

  6. Step 6: Heat the 1 tablespoon sesame oil in a frying pan over medium heat and place the flour-dusted beef rolls in the pan, seam side down.

Uses Flour-dusted beef rolls · 1 tbs sesame oil

  7. Step 7: Cook one side for about 2- 3 minutes or until browned with a lid on.

Uses Beef rolls in the heated pan

  8. Step 8: Turn the beef roll ups over and cook the other side for a further 2-3 minutes.

Uses Beef rolls browned on one side

  9. Step 9: Combine the mashed garlic (1 clove), sake (3 tbs), soy sauce (1 tbs), oyster sauce (1 tbs) and sugar (1 tbs). Pour this sauce over the browned beef rolls in the pan and let it sizzle until the sauce thickens and the beef is cooked through.

Uses Beef rolls browned on both sides · 1 clove garlic mashed · 3 tbs Sake (*3) · 1 tbs soy sauce · 1 tbs oyster sause · 1 tbs sugar

  10. Step 10: Serve with green salad and rice.
