Step 1: Chop onions (½–¾ cup) & tomatoes (1) finely. Slit green chilli & cube bell peppers (¼–¾ cup) (optional).
Step 2: Rinse a bowl and break the eggs (4) to the bowl. This way egg doesn't stick to the bowl.
Step 4: Heat oil (2 tbsp) in the pan and add cumin seeds (0.5 tsp). If choosing the one-sprig curry-leaf herb alternative, add those leaves now and fry until crisp; omit coriander/mint garnish later for this choice.
Step 5: When cumin pops, add the prepared onion and green chili from 1 and sauté until the onion is golden.
Step 6: Add ginger garlic paste (¾–1 tsp) and fry till you get a nice aroma, for a minute.
Step 7: Add the prepared optional chopped tomato from 1 and cook until completely mushy. If using the prepared pepper, add it and fry 2–3 minutes until partly soft.
Step 8: Pour in the same beaten seasoned eggs from 3 and scramble gently, continuing to stir and cook.
Step 9: Once the eggs begin to set, sprinkle the measured garam masala (¾–1 tsp) or chosen pav bhaji masala and red chili powder (½–¾ tsp). Stir and fry 1–2 minutes until the powders smell cooked and the eggs are fully set, while still tender.
Step 10: Taste only after the eggs are cooked through. Add separately listed extra salt or chili powder only if needed.
Step 11: Turn off. If the curry-leaf alternative was omitted, garnish with the two tablespoons coriander OR the eight mint leaves instead. Optionally squeeze a little separate lemon juice at service.
Step 12: Serve egg bhurji with rice or bread/ pav or chapathi.
