Step 1: Mix all 1 lb peeled, deveined, dry shrimp (1 lb) with the 1 tbsp Shaoxing wine, 2 tsp marinade soy sauce and 2 tsp cornstarch. Refrigerate for 10 minutes while preparing the sauce and aromatics.
Step 4: Add all the marinated shrimp from step 1 to all the butter and aromatics from step 3. Arrange in one layer and cook, turning once and stirring occasionally, until both sides are golden. Use a pan large enough for the shrimp to sear; if necessary, cook them in two batches and combine the batches before step 5.
Step 5: Add all the honey-soy sauce from step 2 to all the seared shrimp and pan contents from step 4. Cook and stir about 1 minute until slightly thickened, continuing until the shrimp are pearly and opaque throughout. Stir in the optional green onion, transfer the whole dish to a plate and serve promptly, with optional ready steamed rice. This makes 2–4 main-dish servings. Refrigerate leftovers within 2 hours and use within 2 days. Reheat in a skillet, adding the optional splash of water if the sauce has thickened, until hot throughout (74°C / 165°F); about 2 minutes is the source’s initial reheating guide.
