Method6 steps · about 35 min
Step 1: Soak the 3 oz mung bean vermicelli in warm water for 10 minutes. Cut into shorter pieces with kitchen shears, drain thoroughly and arrange on a heatproof plate. Mix in only the vermicelli seasoning: 1 tbsp Kikkoman oyster sauce, 1/2 tsp Kikkoman light soy sauce, 1/2 tsp salt and 1/2 tsp sugar.
Step 3: Heat the 1 1/2 tbsp oil in a wok for about 30–40 seconds until very hot. Carefully pour it into a heatproof bowl containing the garlic, green onion whites and ginger. Mix in the separate garlic-paste seasoning: 1/2 tsp salt, 1 tsp sugar, 1/4 tsp white pepper, 1 tsp Kikkoman oyster sauce, 1 tsp Kikkoman light soy sauce and 1/2 tsp Kikkoman sesame oil. Mix in the 1 tsp cornstarch.
Step 4: Devein the 12 oz head-on shrimp, lifting the vein out with a toothpick through a segment behind the head. Use kitchen shears to trim the front of each head just behind the eyes and the legs; optionally trim the tail diagonally. Cut through the shell and halfway into each shrimp’s back to make room for the garlic paste.
Step 6: Bring steamer water to a rolling boil just below the rack. Place the assembled shrimp-and-vermicelli plate on the rack, cover and steam on high for about 6–7 minutes, continuing as needed until shrimp flesh is firm, pearly and opaque. Turn off the heat, uncover and garnish with the reserved green onion greens.
