Miso Caramelised Onion Ramen
From the zcook collection
Shrimp and ramen coated in a creamy miso and Parmesan sauce with browned onions. Allow the onions to become deep golden and sweet; the author gives both a 10–12-minute initial guide and a longer 30–40-minute caramelisation estimate. The author’s 10-minute prep and 20-minute cook figures are guides; extra cheese and optional chili oil finish the two servings.

Method6 steps
Step 1: Heat the 1 tbsp olive oil and 1 tbsp unsalted butter in a pan over medium heat. Add the whole large onion, thinly sliced, and the listed pinch of salt (1 pinch). Cook gently, stirring occasionally, until deep golden and sweet, lowering the heat if needed to prevent burning. Start checking at the card’s 10–12-minute guide and continue until that endpoint; the author also notes slow caramelisation can take 30–40 minutes. Lift out all the browned onions and set aside, leaving the actual remaining pan fat for the next step.
Step 5: Boil the noodle blocks from both Shin Ramyun packages in enough separate water, following the actual package directions; leave their seasoning packets out. Drain the cooked noodles. Fold all the browned onions reserved from step 1 back into the creamy shrimp-miso sauce, then immediately toss in all the drained noodles until coated.
Step 6: Divide the coated noodles, shrimp and onions between 2 servings. Garnish with finely chopped chives and separate extra grated Parmesan in unspecified amounts. Add an optional drizzle of chili oil if desired, then serve immediately.
