Method7 steps
Step 1: Slice the raw pork shoulder (1½ lb) thinly, about ⅛ inch according to this saved source version. Chilling it briefly can make slicing easier.
Step 2: Mix the minced shallots (3 tbsp) and garlic (1½ tbsp) with the sugar (¼ cup), fish sauce (1 tbsp), thick soy sauce (½ tbsp), black pepper (½ tbsp) and olive oil (3 tbsp) until the sugar dissolves.
Step 3: Coat the pork thoroughly in the marinade. Cover and refrigerate for 1 hour, or overnight as the source alternative.
Step 4: Heat the oven to 375°F. Spread the marinated pork on a baking tray and bake for 10–15 minutes; this is the initial stage, followed by broiling.
Step 5: Broil the pork, watching closely and turning partway through, until golden and fully cooked, reaching at least 63°C/145°F. Rest for 3 minutes before serving.
Step 6: Prepare the rice vermicelli according to its package, then drain. Reheat the optional already-cooked egg rolls if needed. Slice the cucumber and pick the mint leaves.
Step 7: Divide the cooked vermicelli, cucumber and mint among bowls. Add the cooked pork and optional ready egg rolls, scatter with crushed peanuts and serve the separate prepared nước chấm for dipping or drizzling.
