Step 1: Roughly chop the onion (1), celery (2 stalks), garlic and yellow pepper (1 medium); reserve the pepper for the sauce. If using a regular blender, first soften the cashews (1 1/2 cups) by boiling in separate water 10–15 minutes, or soaking 5–8 hours in the refrigerator; drain and rinse. A high-speed blender can use the raw cashews directly.
Step 2: Cook the prepared onion, celery and garlic over medium-high heat in enough separate water to cover the pot bottom until softened and the onion translucent. Add small splashes if needed to prevent sticking. Keep the measured one cup sauce water andfourcup soup water separate.
Step 3: Add the 500 g frozen cauliflower, four cups soup water or stock, 2 tsp of the divided salt and black pepper to taste. Bring to a boil, lower to medium heat and simmer 10–15 minutes until cauliflower is tender. If using salted stock, start with less salt.
Step 4: While the soup simmers, blend the reserved yellow pepper and cashews with the separate one cup sauce water, remaining 1 tsp salt and scant 1/8 tsp ground mustard until completely smooth. Set this prepared sauce aside.
Step 5: When the cauliflower is done, either use an immersion blender to purée the soup or blend in batches until smooth. Return to pot.
Step 6: Add the cheese sauce to the cauliflower soup and whisk until combined. Adjust seasonings to taste.
Step 7: Garnish with freshly grated nutmeg to serve.
