Step 1: Soak the hard roll (1) in water for about 10 minutes, then squeeze out as much water as possible and discard the soaking water. Peel and finely dice the onion and sauté in a little of the cooking oil until translucent and lightly browned. Transfer the cooked onion to a bowl and keep the squeezed roll aside.
Step 2: Add the 500 g total half-pork/half-beef mixture, egg (1), 1 tsp sea salt, 1 tsp mustard, 1 tsp dried marjoram, 1 tsp paprika, 1 tsp chilli powder, 3 tbsp chopped parsley and 3 minced garlic cloves to the cooked onion. Knead or mix thoroughly until combined.
Step 3: Add the squeezed soaked roll to the meat mixture and knead until evenly incorporated.
Step 4: Shape patties and lay them on a lightly floured surface to prevent sticking. Heat some more of the same chosen cooking oil in a skillet or griddle over medium-high heat. Add a single layer of patties without crowding; cook in batches if needed.
Step 5: Fry for a few minutes without turning until thoroughly browned underneath, turn and brown the second side, then reduce to medium-low and cook for about 10 more minutes. Check with a food thermometer and continue until the centre reaches 160°F /71°C. Transfer to a paper-towel-lined plate and rest for a few minutes. Serve with optional ready mustard OR ketchup.
