Method2 steps · about 1 hr 5 min

  1. Step 1: Preheat the oven to 200°C/400°F. Pat the four sea-bass fillets dry and arrange on a baking-paper-lined tray. Season with the salt (1 teaspoon) and freshly ground black pepper (1/2 tsp).

Uses Fillets from 2 sea bass, 4 fillets total · 1 teaspoon salt · 1/2 tsp freshly ground black pepper

  2. Step 2: Put peeled whole shallots (100 g), sliced garlic (2 clove), thyme leaves (1 teaspoon), cherry tomatoes (200 g) and pitted green olives (100 g) over the fillets. Distribute olive oil (4 tbsp) evenly over fish and vegetables. Roast, checking the fish during cooking; the author gives 45 minutes as a guide, but finish when the thickest fish reaches 63°C/145°F and is opaque and flakes easily, rather than applying that time regardless of fillet size. Garnish with optional dill from the source note and serve.
