Step 1: Prepare the vegetables. Chop up the garlic (3 cloves) cloves, onion (1 small), and carrots (2). Slice the green onions (⅓ cup) and separate the white to light green parts from the darker green parts.
Step 2: In a pan at medium heat, add 1 tablespoon of oil. Whisk the eggs (3 medium) before pouring it in the pan. Cook till lightly scrambled. Set aside.
Step 3: In the same pan, add 1 tablespoon of oil and cook the carrots and green peas (½ cup) for 3 -5 minutes before adding the onions, cook till slightly translucent before adding the garlic, salt (to taste) and pepper. Cook till aromatic.
Step 4: Return the scrambled eggs to the pan and add the white/light-green parts of the green onions and the cold cooked quinoa. Mix well.
Step 5: Mix the soy sauce (3 tablespoons) and oyster sauce (1 tablespoon) in a small bowl.
Step 6: Pour in the pan and mix till everything is coated in the sauce. Try to make sure the quinoa are evenly colored.
Step 7: Serve the hot quinoa stir-fry with a drizzle of sesame oil and the reserved dark-green onion tops.
