Step 1: Blend onion (1), garlic (4 cloves) and chilli into a fine paste.
Step 2: In a wok or pot, heat the oil (3 tbsp) over a medium high flame, and then sauté the onion chilli paste.
Step 3: Add the bay leaves, lemongrass (1), galangal (3 cm) and ginger (2 cm), fry for about 3 minutes until fragrant.
Step 4: Add the cinnamon stick (3 cm), cloves (4), white pepper powder (0.5 tsp) and salt (to taste). Fry for another 1 minute.
Step 5: Add the ribs, and then add the water (500 ml). Mix everything and make sure that the ribs are coated in the liquid.
Step 6: Cook over a medium high flame until it boils, then reduce the heat to medium low.
Step 7: Cover and simmer gently for about 70 minutes, allowing a further 10 minutes for the sauce-finishing stage. Add a little hot water only if needed to prevent drying out. The source eighty-minute total braise is a guide; the ribs must be tender before grilling.
Step 8: Add the tomato sauce (2 tbsp), lime juice (1 tbsp), oyster sauce (2 tbsp) and honey (3 tbsp) for the final 10 minutes of braising. Mix well and simmer gently until the ribs are tender and coated in the sauce; continue if needed, then turn off the heat.
Step 9: Before serving, grill the cooked glazed ribs on a grill pan or an outdoor charcoal grill until lightly charred. Turn and watch closely so the honey glaze does not burn.
Step 10: Serve immediately.
