Method4 steps
Step 1: Inspect all 10 oz live whole lala clams. Discard cracked or damaged shells and any open clam that does not close when tapped. Rinse and scrub under cold running water, then soak in separate cold salted water for 20–30 minutes, keeping the clams cold. Scrub once more, rinse thoroughly and drain; discard the soaking liquid. Set the cleaned clams aside. Heat all 2 tbsp oil in a wok or skillet over high heat, then add the full ginger (1 piece) strips and all 1–2 prepared red chilies. Stir-fry until aromatic.
Step 2: Add all the cleaned clams from step 1 to the actual fragrant ginger-chili oil mixture from that step. Stir-fry briefly, then add all 2 tbsp soy sauce, 1 tsp dark soy sauce, ½ tsp sugar and the separate 2 tbsp sauce water. Add the optional 1 tsp taucheo if using. Continue cooking and tossing until the shells open and the clam flesh is cooked. Discard any clams that remain unopened after cooking.
Step 3: Add the full sliced scallion (1 stalk) to all the cooked opened clams and sauce from step 2. Toss together briefly to combine.
Step 4: Transfer all the finished lala clams and sauce from step 3 to a serving dish and serve immediately as four portions alongside already cooked steamed rice.
