Method6 steps · about 10 min
Step 1: Mix half of one ramen seasoning sachet with all 2 tablespoons light soy sauce, 1 tablespoon sriracha, 1 teaspoon garlic powder, 1/2 tablespoon brown sugar, 1/2 teaspoon white pepper, 1 teaspoon sesame oil and 1 tablespoon water. This is the complete sauce for both noodle packages; keep it aside for step 5.
Step 2: Cook the noodles from both ramen packages in water according to their package directions, without adding any seasoning to the cooking water. Drain and keep the cooked noodles for step 5. Discard the cooking water; no fixed water amount, noodle mass or universal cooking time is supplied.
Step 3: Heat all 1 tablespoon neutral oil in a wok or frying pan over medium-high heat. Have the minced garlic, ginger, chili flakes and separated scallion whites ready.
Step 4: In the heated oil from step 3, stir-fry all 6 minced garlic cloves, 2 teaspoons minced ginger, 1/2 tablespoon chili flakes and the white parts from the 3 scallions for about 1 minute, until fragrant. Keep the green parts for steps 5 and 6; reduce the heat if the garlic begins to scorch.
Step 5: Add all drained cooked noodles from step 2 and the complete sauce from step 1 to the fried aromatics from step 4. Add some of the reserved scallion greens, keeping the remainder for serving. Toss until the noodles are evenly coated and hot throughout.
Step 6: Divide the finished noodles from step 5 between two servings. Add sesame seeds and the remaining reserved scallion greens. If desired, add already-fried Spam and an already-prepared fried egg, or use a pasteurized egg yolk for the uncooked-yolk option. The source gives no fixed amounts for these garnishes or ready toppings.
