Method8 steps
Step 1: Grease a 23 × 23 cm square tin and line with baking paper, leaving overhang to lift out the set slice.
Step 2: Place SAOs on bottom of tray to form a complete layer (cut SAOs to fit if necessary however 9 SAOS should fit well in a 23 x 23cm tin).
Step 3: Reserve 125 ml of the one litre custard milk in a separate bowl. Heat the remaining 875 ml in a saucepan until almost boiling.
Step 4: Mix the custard powder (6 tablespoons) and three tablespoons sugar into the reserved 125 ml cold milk. Whisk this slurry into the hot milk just before it boils, then keep whisking over heat for a few minutes until thickened.
Step 5: Take off the heat and stir in the butter (20 grams) and vanilla extract (1 teaspoon).
Step 6: Allow to cool for a few minutes before pouring the custard onto the SAO biscuits and then top with another layer of SAO biscuits.
Step 7: Refrigerate the assembled slice until cool and set. Once cool, combine the separate one-and-a-half cups icing sugar (1 1/2 cups), two to three tablespoons icing milk and half teaspoon icing vanilla, then spread this icing evenly over the slice.
Step 8: Place back into fridge and allow to set for at least a few hours, ideally overnight. Dust with icing sugar if desired before serving.
