Method3 steps
Step 1: Peel the garlic (1), small ginger piece and onion (1), then roughly chop them. Wash and chop the green chilli (1) and fresh coriander (4 tbsp), measuring four tablespoons chopped coriander for the mixture. Cut both raw boneless skinless chicken breasts (2 large) into pieces and put all these prepared ingredients in a food processor with the mixture salt and black pepper. Blitz until the chicken is finely ground and everything is evenly mixed. Wash hands and clean all surfaces and utensils that contacted raw chicken.
Step 2: With clean hands, divide the complete mixture into six equal portions and flatten each into a small even cake so it can cook through evenly. Keep all six cakes chilled if not frying immediately. Wash hands after shaping raw chicken.
Step 3: Heat both tablespoons olive oil (2 tbsp) in a frying pan over medium heat. Fry all six cakes for about six to eight minutes in total, turning once, until golden outside and fully cooked to at least 74°C / 165°F in the centre, continuing as needed. Transfer to a clean plate. Wash the lime and cut serving wedges; wash and shred the serving spring onions, wash and chop the serving red chilli, and wash and drain the separate serving coriander. Serve the hot cooked cakes with sweet chilli sauce, lime wedges and these prepared garnishes.
