Step 1: Mix the 200 g diced raw beef with ½ tsp cornstarch, 1 tsp sesame oil and 1 tsp Shaoxing wine. Refrigerate to marinate for about 10 minutes while preparing the pineapple and rice.
Step 2: Halve the pineapple lengthwise and hollow out the flesh with a knife and spoon, keeping the two shells for serving. Dice the removed edible flesh. Gently loosen the 500 g refrigerated cooked rice with a fork and 1–2 tbsp water. Have the scallions and bell pepper chopped before heating the wok.
Step 3: Heat a wok or deep frying pan over high heat and add the 2 tbsp neutral oil. Add the marinated beef and fry briefly until its surface turns pale. Lift the beef onto a plate, leaving the oil in the wok; it will return to the pan for the final cooking.
Step 4: Add the chopped scallions (2 stalks) and diced bell pepper to the oil left in the wok. Stir-fry for about 1 minute.
Step 5: Add the diced pineapple flesh and loosened cooked rice, and stir-fry until the rice is piping hot. Return the reserved beef with 4 tsp light soy sauce and ¼ tsp salt, or salt to taste. Toss to distribute the seasonings and finish cooking the beef. Heat the rice and beef through to 74°C (165°F), then serve promptly.
Step 6: Divide the finished fried rice between the two reserved pineapple shells and serve immediately. Use ordinary bowls if preferred.
