Method9 steps · about 20 min
Step 1: Peel the medium onion (1 medium) and chop it finely. Set aside.
Step 2: Deseed and slice the red and yellow bell peppers (1). Finely slice the five mushrooms and set them aside together.
Step 3: Slice the 250 g cooked kiełbasa into rounds about 1 cm thick.
Step 4: Preheat a large frying pan or wok over medium heat. Add the 1 tbsp sesame oil and tilt the pan to spread it over the bottom.
Step 5: Add the chopped onion and ½ cup frozen peas and carrots to the oiled pan. Fry, stirring occasionally, until the onion turns translucent.
Step 6: Add the sliced cooked sausage, mushrooms and bell peppers to the onion mixture. Stir and fry for 2–3 minutes.
Step 7: Push the vegetables and sausage to one side of the pan. Pour the two lightly beaten eggs into the cleared side and scramble with a spatula. Once nearly cooked, mix the eggs into the vegetables and sausage; they will finish cooking in the next stage.
Step 8: Add the 375 g cold cooked rice and 2 tbsp soy sauce to the egg, sausage and vegetable mixture. Stir and fry until evenly combined and piping hot throughout, with the eggs fully set. Check that the reheated rice mixture reaches 165°F (74°C); continue heating if needed.
Step 9: Divide the hot fried rice among four plates. Garnish with the optional 2 tbsp chopped green onions across the servings and eat promptly.
