Method9 steps · about 15 min
Step 1: Have the onion and bell pepper diced and garlic minced, and the pork carnitas already fully cooked, shredded and thawed if necessary. Heat the olive oil (1 tbsp) in a large saucepan over high heat.
Step 2: Add all the ready-cooked carnitas and cook for about 1 minute, until some pieces brown. Lift the pork out and keep it ready, leaving the cooking oil and browned bits in the saucepan.
Step 3: Add the prepared onion (1) and minced garlic (2) to the used saucepan. Sauté for about 2 minutes, until the onion is translucent.
Step 4: Add the prepared red bell pepper (1) and cook for about 1 minute, until softened.
Step 5: Return all the browned pork to the saucepan. Add both cans of beans and corn, the oregano, cumin (2 tsp), paprika (1 tsp), optional chilli powder (¼ tsp), passata (680 g) and prepared chicken stock (4 cups). Keep the salt, pepper and optional toppings aside for finishing.
Step 6: Stir well, scraping the browned pork bits from the bottom of the saucepan into the soup.
Step 7: Bring the soup to a boil, then reduce the heat slightly and simmer rapidly for about 3 minutes, until the soup and pork are fully hot, reaching 74°C / 165°F. Continue as needed. Add a little of the separate extra water only if the soup is too thick.
Step 8: Taste the finished soup, then season with salt and black pepper as needed; the chicken stock and carnitas already contain seasoning.
Step 9: Divide the hot soup between four bowls. Add any of the optional corn chips, sour cream, grated cheese, coriander leaves and diced avocado to taste.
