Step 1: Preheat the oven to 180°C (350°F).
Step 2: Mix the ready cooked pulled pork (1), cheddar, drained corn, drained black beans (¾ cup), diced bell pepper, cilantro, paprika (¼ tsp), cumin (¼ tsp), onion powder (½ tsp) and salt (½ tsp) together in a bowl.
Step 3: Place one thawed spring roll wrapper diagonally in front of you. Put ¼ cup of the filling from step 2 on its lower half and shape the filling into a log.
Step 4: Roll the filled wrapper from step 3 up halfway. Fold both side corners inward, then finish rolling and seal the edge with a little water. Repeat with the remaining wrappers, using ¼ cup filling for each. Keep any leftover filling refrigerated.
Step 5: Arrange the assembled spring rolls from step 4 on a baking tray. Lightly spray one side with olive oil spray, turn them over and lightly spray the other side.
Step 6: Bake the sprayed spring rolls from step 5 for 15 minutes. Turn them in step 7.
Step 7: Turn all the spring rolls from step 6. Bake for another 15 minutes, until golden and crisp and the centers reach at least 74°C (165°F). Continue baking as needed.
Step 8: Serve the finished spring rolls from step 7 with the ready enchilada sauce for dipping.
