Step 1: Cut the salmon into cubes and put in a bowl with 1½–2 cups lemon or lime juice, enough to cover it. Cover and refrigerate for 25–30 minutes, until the acid changes its colour and makes it more opaque.
Step 2: For the dressing, mix salt (½ teaspoon), pepper (½ teaspoon), olive oil (2 tablespoons), garlic (2 tablespoons), soy sauce (1/3 cup), and 2 tablespoons lemon or lime juice ( you can also add a splash of sesame oil (1 teaspoon)). Do a quick taste test to see if it's to your liking. Set aside.
Step 3: Thinly slice the onion (1 medium). Peel and deseed the cucumber (1 medium) and chop it with the tomatoes (2 small).
Step 4: Strain the salmon, and place it back into the bowl, mix in the onions, cucumbers, tomatoes, and jalapeno.
Step 5: Slice the avocadoes (1 medium) into cubes and add them to the dressing bowl. Fold gently to avoid mashing the avocados.
Step 6: Gently combine the salmon and vegetable bowl with the avocado and dressing bowl. Taste and add extra salt (to taste) or pepper only if needed. Cover and refrigerate for 1–3 hours to let the flavours blend.
Step 7: Scoop the ceviche into a clean bowl, avoiding leftover liquids at the bottom of the original bowl. Garnish with fresh cilantro and a side dish of chips or crackers.
