Step 1: Have the garlic and cilantro chopped, the avocado sliced and both separately prepared sauces ready. Preheat the grill to medium-high.
Step 2: Mix the measured teaspoon of olive oil (1 tsp) with the garlic (1 small), cilantro (1 tbsp) and pinch of salt in a large bowl. Add all the raw shrimp (1 lb) and toss to coat. Keep refrigerated until ready to grill.
Step 3: Grill the seasoned shrimp for a few minutes per side, turning as needed, until firm, pearly and opaque throughout. Skewer them if that makes turning easier. Transfer to a clean plate and cool briefly before adding mayonnaise; discard any marinade left after raw-shrimp contact.
Step 4: Toss all the cooked, briefly cooled shrimp with the mayonnaise (2 tbsp). Season with salt and pepper to taste.
Step 5: Open all four buns, brush their interiors with the separate extra olive oil and grill open-faced until lightly toasted.
Step 6: Fill the four toasted buns with avocado slices and a generous share of the cooked shrimp-mayonnaise mixture. Drizzle with the ready-prepared pepita and cilantro pesto, then add a few or more drops of the ready-prepared serrano chile oil to taste. Serve immediately; refrigerate any unused cooked filling promptly within 2 hours.
