Method13 steps

  1. Step 1: Before you start make sure you soak the mushrooms first cuz that can take quite a while (30 mins - 2 hrs) especially if they are thick.

Soak dried shiitakes · 30 minUses 10 g dried shiitake mushrooms · hot water for mushroom soaking

  2. Step 2: If baking right away, preheat the oven to 450°F (230°C).

  3. Step 3: Soak glass noodles (20 g) in room temp water for 10 minutes. Drain, keeping the noodles in straight rows as much as possible (this will make cutting them easy).

Soak glass noodles · 10 minUses 20 g glass noodles (half a small Pine Brand package) · room-temperature water for glass noodle soaking

  4. Step 4: While noodles are soaking, prep the chicken by first removing the drumettes, and then deboning the flats, keeping the tips attached. See the video for technique.

Uses 12 whole chicken wings with tips

  5. Step 5: Coat the deboned wing pockets with the outside 2 tsp soy sauce, initial 1 tsp dark soy and ½ tsp sugar. Add the remaining dark soy only if more colour is needed. Keep refrigerated while preparing the filling; this marinade may be done a day ahead.

Uses 2 tsp soy sauce · 1–2 tsp dark soy sauce · ½ tsp sugar · twelve wing flats with drumettes and both flat bones removed, tips and skin pockets kept intact

  6. Step 6: Cut soaked noodles with scissors into ¾-inch pieces.

Uses twenty grams noodles soaked ten minutes and drained in straight rows

  7. Step 7: Remove mushrooms from soaking water (you can save the water for cooking if you want), squeeze out excess water, remove stems, and finely dice.

Uses ten grams dried shiitakes soaked in hot water until soft

  8. Step 8: Grind peppercorns in a mortar and pestle until fine, add garlic (3 cloves) and cilantro stems (6) and pound into a paste.

Uses 3 cloves garlic · 6 stems cilantro stems · ¼ tsp black peppercorns · ½ tsp white peppercorns

  9. Step 9: In a mixing bowl combine the garlic paste, ground pork (150 g), glass noodles, grated carrot (⅓ cup), green onions (1), shiitake mushrooms, oyster sauce (2 tsp), fish sauce (1 ½ tsp), soy sauce (2 tsp) and sugar (1 ½ tsp). Knead together with your hands until well mixed.

    Uses 150 g ground pork · ⅓ cup grated carrot · 1 green onion · 2 tsp oyster sauce · 2 tsp soy sauce · 1 ½ tsp fish sauce · 1 ½ tsp sugar · soaked noodles cut into three-quarter-inch pieces

  10. Step 10: Line a baking sheet with parchment paper or oiled aluminum foil.

Uses a little foil greasing oil only if using foil instead of parchment

  11. Step 11: Stuff the wings, make sure to push the filling in tightly so there are no air pockets. Keep the filling flush with the edge of the wings, and no more, because the wings will shrink when cooked.

Uses deboned flats coated with their outside soy, dark soy and half teaspoon sugar · ground pork mixed with cut noodles, diced mushrooms, garlic paste, carrot, green onion and filling seasonings

  12. Step 12: Place the filled wings on the lined tray and bake at 450°F (230°C) for 20–25 minutes until browned and cooked through. Check that the centre of the stuffing and thickest chicken reach 165°F (74°C).

Bake stuffed wings · 25 minUses marinated wing pockets packed tightly, with filling flush at the edge and no air pockets

  13. Step 13: You can slice them or leave them whole for serving. Serve with sweet chili dipping sauce.

Uses Sweet chili dipping sauce, store bought or use this easy homemade recipe · stuffed wings browned and cooked through at least 165°F in the centre of stuffing and chicken
