Method10 steps
Step 1: Mash the 3 ripe bananas and place in a bowl.
Step 2: Mix in the eggs (2), melted butter (¼ cup) (cooled to room temperature), oil (¼ cup), and vanilla (1 teaspoon). Set aside.
Step 3: In another bowl, mix the brown sugar (½ cup), all-purpose flour (2 cups), cinnamon (1 ½ teaspoon), baking powder (1 ½ teaspoon), and baking soda (½ teaspoon).
Step 4: If using nuts, raisins (½ cup) or chocolate, toss them with ½ cup taken from the dry mixture to separate the pieces.
Step 5: Fold the remaining dry mixture and any coated add-ins into the wet banana mixture just until no dry flour remains. If omitting all add-ins, fold in all the dry mixture.
Step 6: Prepare a 7 x 3-inch loaf pan, line with parchment, and grease generously with butter or oil.
Step 7: Pour the batter into the prepared loaf pan and smooth the top. Add extra banana slices or nuts on top if desired.
Step 8: Bake in a preheated oven at 350 °F (177 °C) for 40 – 45 minutes.
Step 9: Cool in the pan for an hour before taking it out and placing on a rack to cool further.
Step 10: Serve warm or cooled down.
