Method7 steps · about 30 min

  1. Step 1: Use boneless pork-chop meat (4 oz), trimming fatty edges. Slice against the grain about 2 mm thick. Mix the separate cornstarch (1 tsp), oyster sauce (1 tsp) and 1 tbsp marinade water until even; add the pork and massage about 30 seconds to help it absorb the marinade. Keep refrigerated while preparing the soup.

Uses 4 oz pork chop meat · 1 tsp cornstarch for marinade · 1 tsp oyster sauce for marinade · 1 tbsp water for marinade

  2. Step 2: Separate the bok-choy stalks and wash thoroughly in clean water, rubbing away dirt near their bases. Rinse and drain. If you have time, the author optionally soaks the washed bok choy in clean water for 30 minutes; drain before cooking. This water is separate from the measured 5 cups soup water.

  3. Step 3: For larger bok-choy stalks, cut the stalks lengthwise and separate the thicker stems from leaves; smaller stalks can stay intact. Prepare the optional 2 thin ginger slices.

Uses Washed drained bok choy · 2 thin ginger slices, optional

  4. Step 4: Bring the 5 cups soup water and 14 oz chicken broth to a boil in a pot. Add the oil (1 tsp), salt (1 tsp) and optional ginger, then cover until boiling.

Uses 5 cups water for soup · 14 oz chicken broth · 1 tsp oil · 1 tsp salt · Optional prepared ginger slices

  5. Step 5: Add the prepared bok-choy stems first, then shortly afterward add the leaves. Cover and return to a gentle boil.

  6. Step 6: Add the marinated pork slices a few at a time, separating them. Add optional chicken bouillon (1 tsp) if desired. Stir and return to a boil; use about 1–2 minutes as the source guide, continuing until the thin pork slices are cooked through.

Uses Bok choy in boiling soup · Thin sliced marinated pork · 1 tsp chicken bouillon, optional

  7. Step 7: Serve the cooked pork, broth and bok choy together. Alternatively, lift the cooked bok choy onto a separate serving plate and serve the pork broth alongside. For a large batch, remove the greens promptly to preserve their colour and texture.
