Step 1: Cut all 500 g pork belly into bite-size pieces. Season the pieces with all 1/2 teaspoon chili powder, 1 teaspoon garlic powder, 1/2 teaspoon onion powder and 1/2 teaspoon salt, distributing the seasoning evenly.
Step 2: Mix all 2 tablespoons gochujang, 1 teaspoon garlic paste, 1 teaspoon ginger paste, 1 tablespoon dark soy sauce, 2 tablespoons honey, 1 tablespoon rice vinegar and 1 teaspoon sesame seeds. Keep the complete glaze aside for step 4; the measured sesame dose belongs entirely to this sauce.
Step 3: Heat a pan over medium-high heat. Add all seasoned pork from step 1 and brown for about 5 minutes per side, turning the pieces to expose their other sides and render their fat. Use golden edges as the browning endpoint; the five-minute reminder applies to one side rather than the whole stage. Keep the actual browned pork in the pan for the glaze.
Step 4: Add the complete mixed glaze from step 2 to the browned pork from step 3. Toss and cook until every piece is coated and the sauce clings to the pork. Check the thickest pieces reach at least 63°C (145°F), continuing as needed, then take the finished dish off the heat and rest for at least 3 minutes before serving. Start the rest reminder after cooking is finished.
Step 5: Divide the rested glazed pork and sauce from step 4 between three servings. Serve with hot already-cooked rice as desired and finish with chopped chives and extra sesame seeds if wanted. Rice and extra garnishes are unmeasured serving supplies; do not take a second dose of the 1 teaspoon sesame already mixed into the glaze.
