Step 1: Over medium-high heat, fry all the diced SPAM (1 can) in a large pan or wok without adding oil, until the surfaces are browned and slightly crisp. Transfer the cooked cubes to a bowl and keep them ready to return later.
Step 2: Add a little cooking oil to the same pan. Add the minced whole head of garlic (1) and cook until lightly browned and fragrant, taking care not to burn it.
Step 3: Add all 5–6 cups of cold cooked rice to the garlic pan and mix. Pat the rice into an even layer against the pan and fry for about 3–4 minutes, until the underside is as golden and crisp as you like.
Step 4: Push the crisped rice to the sides to make a space in the middle. Crack in all 4–5 eggs and drizzle half the Maggi seasoning over them (½ tbsp from the single 1 tbsp supply). Break the yolks and roughly scramble for about 1 minute, continuing until the eggs are set; leave some separate white and yellow pieces as the source describes.
Step 5: Fold the cooked eggs through the fried rice and return all the browned SPAM from its holding bowl. Add the remaining ½ tbsp Maggi seasoning and the optional 1 tbsp sesame oil. Toss until evenly seasoned and the held SPAM and rice are hot throughout.
Step 6: Serve the hot fried rice as the source lunch for three. Refrigerate leftovers promptly in a sealed container for the source 3–4 days. Reheat thoroughly to 165°F (74°C): the author offers a damp-paper-towel microwave guide of 1–2 minutes, or steaming for 5–6 minutes; use the hot-through endpoint rather than either guide alone.
