  1. Step 1: Halve any very wide white cabbage stalks lengthwise, then shred all 300 g cabbage crosswise into a bowl.

Uses 300 g Chinese (Napa) cabbage

  2. Step 2: Toss the shredded cabbage with 2 pinches salt and leave for 5 minutes to wilt.

  3. Step 3: While the cabbage wilts, put the rice wine vinegar (3 tbsp), vegetable oil (2 tbsp), sugar (½ tbsp) and wasabi paste (1 tsp) in a lidded jar. Close and shake until the sugar dissolves and no wasabi lumps remain.

Uses 3 tbsp rice wine vinegar · 2 tbsp vegetable oil · ½ tbsp sugar · 1 tsp wasabi paste

Prepared wasabi dressing in a jar.
  4. Step 4: Quarter and core the apple, keeping the red skin. Slice across each quarter about 3 mm / ⅛ inch thick so each piece has a band of skin.

    Uses 1 small red apple

  5. Step 5: Squeeze as much water as possible from the wilted cabbage and put it in a mixing bowl. Discard the squeezed-out liquid.

    Uses Salt-wilted cabbage

  6. Step 6: Add the sliced apple to the squeezed cabbage and toss to distribute it evenly.
