Method10 steps
Step 1: The day before cooking, thinly slice the selected lamb OR ribeye steak. Pound each slice with a flat meat tenderizer to about 6×5 cm in area.
Step 2: Mix grated onion (2), oregano (3 teaspoon), red-pepper flakes (3 teaspoon), marinade olive oil (3 tbsp), marinade salt (1/2 teaspoon) and marinade black pepper (1/4 teaspoon) in a large bowl. Coat each meat slice, cover and marinate overnight in the refrigerator.
Step 3: On cooking day, preheat the oven to 180°C/350°F. Keep marinated meat refrigerated until needed.
Step 4: Heat the separate 2 tbsp sauce olive oil in a saucepan. Stir in tomato paste (3 tbsp), sauce salt (1/4 teaspoon) and sauce black pepper (1/4 teaspoon). Add the measured water (2 cups), bring to a boil and simmer 10 minutes.
Step 5: Cut the ready pide/pita OR ordinary bread into 2×2 cm squares and warm on an oven tray for 5 minutes.
Step 6: Heat the unmeasured skillet olive oil over high heat and fry marinated meat about 3 minutes per side, continuing until the meat reaches 63°C/145°F. Add the single listed 2 tbsp topping butter to the skillet as the meat cooks and let it sizzle. Remove cooked meat and let it rest at least 3 minutes before plating; retain the hot sizzling butter separately for topping.
Step 7: Place the warm square cut Pide Bread / Cube Bread pieces to the plates evenly.
Step 8: After the meats cooked; place the meats on top of the warm Pide Bread / Cube Bread pieces evenly and then pour over the tomato sauce.
Step 9: Right after you pour tomato sauce, pour the sizzling butter over the top of the tomato sauce.
Step 10: Serve immediately with plain yogurt (2 cups).
