Method6 steps · about 30 min
Step 1: Bring a pot of water to a full boil and add all 40 g dry small tapioca pearls. Cover, lower the heat and simmer for about 15 minutes, until the pearls are mostly transparent with a small white centre. Follow the package guidance if these particular small pearls need a different time. Prepare the fruit in steps 3 and 4 while the pearls cook.
Step 2: Remove the pearl pot from the heat and leave it covered for a further 5–10 minutes. Check from 5 minutes and continue resting until the pearls are completely transparent, without a white centre.
Step 3: Meanwhile, peel the two ripe mangoes, remove their stones and cut the flesh into cubes. Set aside one quarter of the mango cubes for garnishing. Blend the other three quarters with all 4 tbsp coconut milk and 3 tbsp single cream until very smooth. Taste and blend in a little of the optional sugar only if desired. Keep the puree and reserved mango cubes separately ready.
Step 5: When fully transparent, drain the pearls and rinse them under cold water, then drain well again. Divide the drained pearls between four bowls or glasses. Spoon the smooth mango puree over them and garnish with the reserved mango cubes and prepared grapefruit flesh.
Step 6: Serve immediately, or cover and chill the assembled desserts in the refrigerator until you want to serve them.
