  1. Step 1: Trim excess fat from the pork shoulder (12 oz). Cut into strips, slices and then very small pieces, keeping enough fat for a tender patty. Pat away excess moisture and keep the pork chilled while preparing the vegetables.

    Uses 12 oz pork shoulder

  2. Step 2: Cut the pickled mustard tuber into small strips. Crush the water chestnuts (4 oz) into small pieces with the blunt edge of a knife or a spatula. Chop the green onion (2 pieces), reserving its green portions for garnish and its white portions for the patty.

Uses 1 1/2 oz hot pickled mustard tuber · 4 oz water chestnuts · 2 pieces green onion, divided

  3. Step 3: Mix the finely chopped pork with 1 tbsp oyster sauce, 1 tsp sugar, 2 tbsp cornstarch, 1 tsp sesame oil, 1 tsp chicken bouillon and 1/4 tsp white pepper.

  4. Step 4: Stir the seasoned pork thoroughly with chopsticks for about 1 minute until stickier and pastier. Mix in the prepared green onion whites, crushed water chestnuts and pickled mustard for another 2 minutes.

  5. Step 5: Coat a heatproof plate with 1/2 tsp of the measured corn oil. Mix the remaining 1/2 tsp into the pork mixture, then spread the mixture on the plate and flatten with a spoon. If desired, spread a little separate additional corn oil over the surface for a gloss.

  6. Step 6: Bring steamer water to a boil over high heat, with the level just touching the bottom of the dish on its rack. Carefully place the assembled patty plate on the rack, cover and steam for about 15 minutes. A metal plate may cook about 2–3 minutes faster; in either case, continue until the finely chopped pork reaches 71°C in the centre.
