Step 1: Preheat the oven to 200°C conventional (392°F) or 180°C fan.
Step 2: Peel the potatoes (700 g) and onions (2) and slice thinly. Grate the cheese.
Step 3: Heat the oil (2 tbsp) over a medium heat in an ovenproof frying pan.
Step 4: Cook the prepared sliced onions in the heated oil for 5–10 minutes until softened, then set aside.
Step 5: Melt 1 tablespoon of the measured butter (1 tbsp) in the ovenproof pan over medium heat, then turn off the heat.
Step 6: Start layering with one-third of the prepared thinly sliced potatoes, one-third of the softened onions and one-third of the grated cheese.
Step 7: Season the first layer with one-third each of the measured salt, pepper, ground nutmeg and fresh thyme.
Step 8: Repeat twice more with the remaining prepared potatoes, cooked onions and grated cheese, dividing the remaining measured seasonings between those layers.
Step 9: Dot the top of the complete prepared bake with the remaining 1 tablespoon butter.
Step 10: Heat the prepared layered pan for 5 minutes over medium heat to start cooking the potatoes.
Step 11: Cover the prepared pan with foil or a lid and bake for 40–50 minutes until the potatoes are tender.
Step 12: Remove the cover from the prepared tender bake and bake for a further 10 minutes to brown.
