Step 1: Have the cooked rice and four cooked eggs ready. If using freshly cooked rice, let it cool for 5–10 minutes before frying. Preheat a pan or wok over medium-high heat, add 1 Tbsp cooking oil and spread it over the pan.
Step 2: Add the minced garlic (1/2 tsp) to the oiled pan and stir for 10 seconds. Add the optional bite-size bacon (150 g) and stir-fry until partly cooked.
Step 3: Add the chopped kimchi (1 cup) to the pan. Stir-fry until it has mostly softened, then proceed; the bacon, if used, continues cooking with it.
Step 4: If using enoki mushrooms (1 package), add them and stir well for a few seconds. Lower the heat to medium or medium-low.
Step 5: Add the already cooked rice and the kimchi juice. Use the default 1/4 cup juice, or if short use 2 1/2 Tbsp juice with either 1 Tbsp gochujang or 1 Tbsp soy sauce. If the kimchi is fresh rather than sour, add the optional 1/2 tsp rice vinegar. Mix thoroughly and cook until the rice is hot, the mushrooms are softened and any bacon is cooked through.
Step 6: Mix the 1/2 Tbsp sesame oil through the hot fried rice, then remove the pan from the heat.
Step 7: Divide the fried rice among four plates. Add the optional toasted sesame seeds (1 Tbsp), thinly sliced green onion (1/2 stalk) and shredded seasoned seaweed. Top each portion with one already cooked egg and serve.
