Method6 steps

  1. Step 1: Prepare a steamer with enough water to steam the puddings without the water touching the bowls, and bring the water to a boil. Meanwhile, combine the 1 cup whole milk, ¾ cup light cream and ¼ cup sugar in a small saucepan over low heat. Stir until the sugar dissolves and the mixture is warm to the touch, but not hot.

  3. Step 3: Strain the pudding mixture through a fine-mesh strainer and divide it among three heatproof serving bowls, about 3–4 inches in diameter. Cover each bowl with foil.

  4. Step 4: Once the steamer water is boiling, carefully place the three covered pudding bowls inside. Steam for about 8–10 minutes: wider, shallower bowls may need about 8 minutes, while narrower bowls can take longer. Keep the water steaming and do not let the steamer dry out.

  5. Step 5: Turn off the heat and leave the puddings in the closed steamer for 10 minutes before opening the lid. Carefully remove the bowls and foil. The puddings should be set and cooked through, reaching 71°C/160°F in the centre. If needed, return them to the steamer and cook until that endpoint is reached.

  6. Step 6: Serve the three puddings warm with fresh fruit, granola or nuts to taste, if desired. For a chilled serving, refrigerate the cooked puddings promptly at 4°C/40°F or below until cold, then add your preferred toppings.
