Method7 steps
Step 1: Heat the one-and-a-half teaspoons oil (1 1/2 teaspoons) in a pan over medium heat. Add the half teaspoon mustard seeds and let them crackle.
Step 2: Add the chopped onion (1) and four to five curry leaves. Saute until the onion is translucent.
Step 3: Add the five cups finely chopped cabbage, salt (to taste) to taste, three-eighths teaspoon turmeric, quarter teaspoon red chili powder and threequarter teaspoon ground coriander (3/4 teaspoon). Toss until the cabbage is evenly coated.
Step 4: Add the quarter cup plus two tablespoons green peas and mix. Use frozen peas as in the source; if using fresh peas, boil them until slightly softened before adding.
Step 5: Cover and cook over medium heat about five to six minutes, stirring as needed, until the finely chopped cabbage and peas are tender. Continue cooking to that endpoint if needed.
Step 6: If desired, sprinkle with either garam masala or chaat masala to taste. Add the optional teaspoon lemon juice (1 teaspoon) and mix.
Step 7: Serve hot with separately prepared roti or paratha.
