Method6 steps · about 30 min
Step 1: Grind the shallots (50 gram), garlic (3 cloves), chosen serrano (3)/cayenne chillies and ginger (1-inch piece) into a spice paste. Separately mix 30 g tamarind pulp with 1½ cups water, strain and reserve the liquid, discarding pulp. Heat 4 tbsp oil in a wok over medium-high heat and fry the spice paste for about 3 minutes until fragrant.
Step 2: Add curry leaves (3 sprigs), lemongrass (2 stalks), and curry powder (1 tablespoon). Mix well, and cook for another 2 minutes.
Step 3: Add tomato (1) and tamarind liquid, bring to a boil.
Step 4: Add the chosen fish supply to the boiling curry base and season with the listed sugar (1 tablespoon) and salt (1 teaspoon) to taste. Cook until the fish is cooked through and its thickest part reaches 63°C/145°F.
Step 5: Add the 250 g halved okra and cook for about another minute, continuing gently if needed until the okra is tender.
Step 6: Turn off heat, transfer to a serving bowl. Serve immediately with steamed white rice.
