Step 1: Fill a small pot halfway with water and bring it to a boil. Add the whole 12 oz block of already deep-fried tofu (12 oz) and boil for 20 seconds. Lift it out, drain and allow it to cool enough to handle; this brief blanch removes excess oily flavour rather than frying the tofu again.
Step 2: Cut the same drained, cooled tofu block into about ½-inch cubes and place all the cubes in a mixing bowl.
Step 3: If starting with dried ogo, soak it in separate water for about 2–3 minutes until rehydrated, then drain, weigh 1 oz of the wet seaweed and chop it into ½-inch pieces. Add that prepared wet ogo, minced ginger (1 piece), 2–3 chopped green onion stalks, sesame seeds (1 tbsp) and Hawaiian sea salt (2 tsp) to the tofu cubes. Add the optional chopped ½ onion if desired. Toss gently to distribute the seaweed and seasonings.
Step 4: Mix all 1 tbsp sesame oil and 1 tbsp shoyu in a small dish, then pour the whole dressing over the seasoned tofu and ogo. Toss gently until evenly coated.
Step 5: Cover and refrigerate the complete dressed tofu poke for 30 minutes so the flavours combine. Serve chilled for 3–4 people as a side dish. Separately prepared rice can be served alongside if desired.
