  1. Step 1: Begin with the three already fully cooked and chilled octopus tentacles (3). Thinly slice them and put all the slices in a large mixing bowl. Keep them chilled while preparing the seasonings.

Uses 3 octopus tentacles, already fully cooked and chilled

  2. Step 2: Add all the chopped small onion (1), chopped green onions (3), sesame seeds (1 tbsp), soy sauce (1 tbsp) and sesame oil (1 tbsp) to the sliced octopus. Add the optional 1 tsp chili powder or flakes if you want a little heat.

Uses Sliced cooked chilled octopus from three tentacles · 1 small onion, chopped · 3 green onion stalks, chopped · 1 tbsp sesame seeds · 1 tbsp soy sauce · 1 tbsp sesame oil · 1 tsp chili powder or flakes, optional

  3. Step 3: Toss until every cooked octopus slice is evenly coated. Serve chilled for 4–6 people as a snack or side dish; rice may be prepared separately to serve alongside. Refrigerate promptly in a sealed container and use within the author’s 2–3 days. For an outing, carry it in a cooler and keep it chilled until eating.

Uses Cooked octopus slices with all added seasonings · Optional cooked rice to serve alongside the chilled octopus poke.
