From the zcook collection
Chicken breast pieces finished off the heat with tahini and honey, served with yogurt and four warmed oregano pita breads. The 15-minute guide assumes parallel preparation and a ready oven; thick chicken pieces may need longer.

Step 1: Preheat the oven to 250°C for the pita breads. Pat the chicken breasts (4) dry with paper towels.
Step 2: On a clean board, cut each dried chicken breast into 3–4 large pieces. Season with the chicken salt and freshly ground black pepper.
Step 3: Heat a large pan over high heat and add all 2 tbsp chicken olive oil. Add the prepared chicken pieces without crowding and sauté for 3–4 minutes on the first side, until nicely colored.
Step 4: Turn the chicken pieces and sauté their second side for another 3–4 minutes until nicely colored.
Step 5: Add the 1 tbsp soy sauce to the browned chicken and stir. Sauté for another 1 minute, then check that the thickest pieces reach 74°C / 165°F on a food thermometer. For thicker pieces, lower the heat and continue cooking until that endpoint is reached.
Step 6: Once the chicken is fully cooked, remove the pan from the heat. Stir in all the tahini (1 tbsp) and honey (1 tbsp) until the chicken is evenly coated. Rest for 2 minutes while warming the pita if the oven is ready.
Step 7: Brush both sides of the four pita breads with the separate extra pita olive oil and season with pita salt and oregano. Set a large oven tray upside down near the bottom of the preheated 250°C oven and put the pita on its upper surface. Bake for 1–2 minutes until warmed, watching closely because they heat quickly.
Step 8: Divide the rested tahini-and-honey chicken among four portions. Spoon yogurt generously over each portion and serve with one warm prepared pita bread per person.
