Method4 steps

  1. Step 1: Set a sieve over a large bowl and line with clean muslin or thick non-dyed kitchen paper. Spoon in all the yogurt, cover and leave it to strain in the refrigerator for at least twelve hours, retaining the thickened yogurt separately from its collected liquid.

Minimum refrigerated yogurt straining · 720 minUses 500g Natural Yoghurt

  2. Step 2: Mix all the lemon juice (2 tsp) and measured dried mint (1 tablespoon) with most of the measured olive oil, reserving a drizzle for the garnish. Stir until the mint softens, then mix in all the thickened strained yogurt. Discard the yogurt liquid and retain its empty bowl for preparing the cucumber.

Uses 2 tsp Lemon Juice · Most of the measured tablespoon olive oil; reserve a drizzle · 1 tablespoon Dried Mint · All the strained yogurt

  3. Step 3: Wash the cucumber (1), halve lengthways and scoop out the seeds. Cut into shorter sections and coarsely grate into the emptied straining bowl. With clean hands or clean muslin, squeeze as much cucumber liquid out as possible and discard that liquid.

    Uses 1 Cucumber

  4. Step 4: Peel and mince both garlic (2 cloves) cloves. Mix all the prepared squeezed cucumber, minced garlic and measured flaky salt (¾ tsp) into the yogurt mixture. Garnish with the held drizzle of measured oil and a little additional dried mint, then serve.

Uses All the prepared yogurt mixture · All the squeezed cucumber · 2 cloves minced Garlic · ¾ tsp flaky salt for finished cacik · Reserved drizzle from measured tablespoon olive oil · Additional dried mint, a small sprinkling to serve
