Method7 steps · about 1 hr 5 min

  1. Step 1: Peel the potatoes (900 g) and cut into medium-small cubes. Put them in a bowl, cover with cold water and soak for 10 minutes.

Soak potato cubes · 10 minUses 900 g potatoes, such as Maris Piper or Russet · Cold water to cover the potato cubes

  2. Step 2: While the potatoes soak, mix the vinegar and sugar (1.5 teaspoons) in a small bowl and set the dressing aside. Finely slice the onion (1 large).

Uses 2 tablespoons white wine vinegar · 1.5 teaspoons white sugar · 1 large brown or white onion

  3. Step 3: After the 10-minute soak, drain the potato cubes and dry them thoroughly in a clean kitchen towel.

    Uses Soaked potato cubes

  4. Step 4: Heat 3–4 tablespoons olive oil in a large pan over medium to medium-low heat. Add the dried potato cubes and fry for about 20–25 minutes, until slightly golden. Avoid excessively high heat that browns them before they soften.

Brown potatoes · 25 minUses 3–4 tablespoons olive oil · Dried potato cubes

  5. Step 5: Add the sliced onion to the golden potatoes with a good pinch each of salt and pepper. Stir, cover and cook over medium-low heat for about 15–20 minutes, until potatoes and onions are cooked through. Stir occasionally to prevent sticking. If they begin sticking or drying out, add about 2 tablespoons water.

Cook potatoes and onions, covered · 20 minUses Golden fried potatoes · Sliced onion · A good pinch of salt · A good pinch of pepper · About 2 tablespoons water, only if the covered pan is sticking or drying out

  6. Step 6: Uncover the cooked potatoes and onions. Add the oregano, green olives (70 g), drained capers (2 tablespoons) and prepared vinegar-sugar dressing. Stir until combined, then turn off the heat. Taste and add more salt only if needed.

Uses Cooked potatoes and onions · 1 teaspoon dried oregano · 70 g green olives · 2 tablespoons capers jarred in brine, drained · Vinegar-sugar dressing · Additional salt, only if needed

  7. Step 7: Serve the finished potato and onion salad warm or let it reach room temperature before serving.
