Method6 steps
Step 1: Thinly slice the garlic (1-2 cloves) and set aside.
Step 2: Mix the sugar (1 Tbsp), soy sauce (2 Tbsp), sake (2 Tbsp) and 2 tablespoons water in a bowl to make the steak sauce.
Step 3: Season both one-inch-thick New York steaks (2) with salt and white pepper.
Step 4: Heat a frying pan over medium-high heat and add enough oil for frying. Add the sliced garlic, cook until lightly browned, then lift it out and reserve for garnish, leaving the flavoured oil in the pan.
Step 5: Cook the seasoned steaks in the same pan, using about 2 minutes per side as an initial guide and adjusting the heat and time for their thickness. Cook until the centres reach at least 63°C (145°F). Add the prepared steak sauce, turn the meat to coat, then remove the steaks. Simmer the sauce left in the pan for 1 minute to reduce it. The timer covers only this final sauce reduction.
Step 6: Rest the cooked steaks for at least 3 minutes before slicing or eating. Plate the two steaks, pour the reduced pan sauce over them and top with the reserved browned garlic.
