Step 1: Remove the shrimp (500 g medium) head, cut the back of the shrimp using scissors, and devein.
Step 2: Place the cleaned, deveined shrimp in a bowl and drain excess water.
Step 3: Marinate the shrimp with baking powder (1 tsp), white pepper powder, vinegar (2 tbsp), egg white (2 tbsp), salt (to taste) and cornstarch (4 tbsp) for 15 minutes.
Step 4: Deep-fry the coated shrimp in enough oil over medium-high heat in several batches, around 3 minutes per batch, until the flesh is pearly white and opaque. Use the timer for each batch.
Step 5: Leave the shrimp to rest for about 5 minutes.
Step 6: Briefly re-fry the rested shrimp in the hot frying oil for less than 1 minute to crisp the skin. Drain and set aside.
Step 7: Heat 4 tbsp cooking oil over medium heat and fry the garlic (5 cloves) over medium heat for around 3 minutes or until the garlic turns slightly golden. Set aside.
Step 8: Remove any remaining fried garlic from the pan and reserve it with the garlic already set aside. Sauté the shallots (2), chillies and spring onion (1) in the remaining garlic oil for a few seconds.
Step 9: Add the dash of white pepper, salt to taste and oyster sauce (1 tbsp), plus the mushroom stock powder if desired. Sauté for another 2 minutes, then turn off the heat.
Step 10: Add the fried garlic, and mix.
Step 11: Add the fried shrimp, mix thoroughly.
Step 12: Transfer the shrimp onto a serving dish.
