Method6 steps · about 30 min
Step 1: Lightly beat eggs (4) with salt (1/2 teaspoon) and pepper in a mixing bowl.
Step 2: Heat oil (3 tablespoon) in a large skillet (or a wok) on medium-high heat. Sauté garlic (3 cloves) and shallot (50 gram) until fragrant for about 3 minutes.
Step 3: Add carrots (250 gram) and green beans (250 gram), stir to mix, and cook for about 1 minute.
Step 4: Push the vegetables to one side. Pour the prepared seasoned eggs into the empty side and stir into scrambled eggs, cooking until fully set.
Step 5: Mix the scrambled eggs with the vegetables. Season with soy sauce (1 tablespoon), fish sauce (1/2 tablespoon), sugar (1/2 tablespoon) and the separate second ½ tsp pepper, then add the three sliced seeded jalapeños and scallions (3) and mix well.
Step 6: Turn off the heat and serve the stir fry immediately with steamed white rice.
