Bistik Daging Kambing: Lamb ‘Steak’, or Soy Sauce Lamb
From the zcook collection
Bistik is an Indonesian adaptation of ‘beef steak’, and is made by braising meat in a soy sauce gravy that’s later reduced to form a thick sauce. It can be made with any meat, and in this case, we’ve used lamb.

Step 1: Put the 750 ml water, seven whole cloves, 1-inch length of cinnamon stick (1-inch), seven cardamom pods and bay leaf (1) in a large pot and bring to a boil.
Step 2: Add the lamb and salt to taste (to taste) to the aromatic broth. Lower the heat to a simmer while preparing the onions in the other pan.
Step 3: Meanwhile, in a wok or a large pan, heat the vegetable oil (3 tbsp) over low heat. Add the ghee (2 tsp).
Step 4: Add the sliced onions. Sauté on low heat until brown and caramelized, about 20 minutes.
Step 5: Add the shallots (5) until they soften. Then, add the ginger (1-inch piece) and garlic (4 cloves). Sauté until fragrant, about 3 minutes.
Step 6: Add either 2 tbsp dark soy sauce or 2 tbsp sweet soy sauce, then the black pepper. Use one soy sauce, not both.
Step 7: Pour all the contents of the boiling pot of meat into the wok or frying pan, and continue simmering for about 1 hour, or until the meat is tender.
Step 8: Add the sliced potatoes (3) and simmer until they are soft.
Step 9: Increase the heat to reduce the gravy to a thick sauce.
Step 10: Turn off the heat and serve.
