Step 1: Rinse the Swiss chard (1 bunch), shake off the excess water and separate the stems from the leaves. Chop the stems into small pieces, about 1 cm (1/2 inch), and the leaves into larger pieces, about 4 cm (1.5 inches). Keep the stems and leaves separate; the leaves need not be thoroughly dried.
Step 2: Heat the 1 tbsp oil in a cast-iron pan, wok or heavy skillet until hot. Add the coarsely chopped garlic (3) and stir a few times until fragrant.
Step 3: Add all the prepared chard stems to the garlic oil. Cook, stirring, until the stems begin to soften.
Step 4: Add all the prepared chard leaves and stir briefly. Add the 1 tsp sugar and swirl in the 2 tsp soy sauce or chosen tamari; immediately toss to distribute the seasoning. Cook, stirring, until the leaves and stems are tender, then transfer immediately to a serving plate to stop cooking.
Step 5: Serve the stir-fried chard warm or at room temperature as a side dish for 2–4 people.
