  1. Step 1: Pat the baby back ribs (3 lb) thoroughly dry with paper towels.

Uses 3 lb baby back ribs

  2. Step 2: Mix the sugar (¼ cup), salt (2 tsp), five-spice powder (½ tsp), white pepper (¼ tsp), sesame oil (½ tsp), Shaoxing wine (1 tbsp), soy sauce (1 tbsp), hoisin sauce (1 tbsp), molasses (2 tsp), optional food coloring and finely minced garlic (3 cloves) in a bowl.

    Uses ¼ cup sugar · 2 tsp salt · ½ tsp five-spice powder · ¼ tsp white pepper · ½ tsp sesame oil · 1 tbsp Shaoxing wine · 1 tbsp soy sauce · 1 tbsp hoisin sauce

Measured char siu marinade ingredients in a bowl before mixing.
  3. Step 3: Before the marinade touches the raw ribs, reserve about one third in a clean covered container for basting. Rub the remaining marinade over the ribs. Cover and refrigerate both the ribs and the separate clean reserve for at least 2 hours, or overnight.
