Method12 steps · about 40 min

  1. Step 1: Choose one rice route. If using 3–4 cups ready cooked and cooled rice, skip 1–4 and continue to 5. For rice from scratch, wash one cup dry aged rice at least three times and drain. If using basmati, soak 20–30 minutes in fresh water, then drain completely.

Uses one cup dry rice ONLY if ready-cooked short cut omitted · ample fresh rice rinse and optional basmati soak water; discard after draining

Raw rice before rinsing and cooking.
  2. Step 2: Ordinary-pot route only: bring two cups measured cooking water to a rolling boil, add the drained rice and cook covered over low heat until fully cooked but not mushy. Skip pressure route 3 and continue to 4.

Uses ordinary pot ONLY: 2 cups water · ONLY from-scratch route: one cup dry rice washed, optional basmati soak completed and drained

  3. Step 3: Pressure-cooker route only: for basmati use 1¾ cups measured water and cook to one whistle. For another rice, use its usual plain-rice water ratio and the two-whistle method. Rice should be fully cooked and grainy. Let pressure release and open according to cooker instructions; continue to 4.

Uses basmati pressure route ONLY: 1¾ cups water; other rice usual plain-rice ratio · ONLY selected pressure route: same dry rice rinsed/soaked and drained

  4. Step 4: Fluff the fully cooked rice gently and let it cool completely before mixing with the coconut tempering.

Uses ONLY ordinary pot: rice cooked fully in measured two cups water · ONLY pressure route: fully cooked rice, pressure released safely

  5. Step 5: Slit or chop the green chilies, finely chop the ginger (1 tsp) and grate or shred the coconut (1–1½ cup). Set aside for their later cooking phases.

Uses 1–1½ cup fresh or frozen coconut · 1–2 green chili · 1 tsp ginger

  6. Step 6: Pour ghee or oil (2 tbsp) to a pan and heat it.

    Uses 2 tbsp oil

  7. Step 7: Fry the cashews (12–15) or chosen peanuts in the heated oil until golden. Remove and reserve these same nuts for the final garnish; keep the existing fat in the pan.

Uses 12–15 cashews · two tablespoons oil or selected ghee heated in pan

  8. Step 8: Add mustard seeds (0.5 tsp), optional cumin and broken optional red chili to the same oil, followed by chana dal (1 tbsp) and urad dal (0.5 tbsp). Fry until the dals turn golden and aromatic.

Uses 1 dried red chili · 0.5 tsp mustard seeds · 0.5 tsp cumin seeds · 1 tbsp chana dal · 0.5 tbsp urad dal · existing fat after cashews/peanuts fried golden and reserved

  9. Step 9: Add the chopped ginger and green chilies from 5 and the curry leaves. Fry 30–60 seconds until the leaves are crisp, then stir in the hing (1 pinch).

Uses 1 pinch hing · 1 sprig curry leaves · dals, mustard, optional cumin and red chili fried in same oil · same measured ginger/chilies chopped during ingredient preparation

  10. Step 10: If you prefer softer dals, add the separate optional three tablespoons water, cover briefly and cook until softened. Add a further 2–3 tablespoons only if needed. Evaporate all this softening water completely before adding rice.

Uses 3 tbsp water · water (extra 2–3 tbsp only if dal still too firm; evaporate fully) · ginger/chili/curry leaves crisp, hing stirred in

  11. Step 11: Add the grated coconut and half teaspoon salt. If using frozen coconut, warm it through first. Add only the cooled rice from 4 OR the 3–4 cups ready-cooked short cut rice. Turn off the heat immediately and mix gently with the tempering.

Uses 0.5 tsp salt · 3–4 cups ready cooked/cooled rice ONLY instead of rice-cooking 1–4 · same spice/dal base; all optional softening water fully evaporated · fresh/frozen coconut prepared earlier · ONLY from-scratch route: chosen pot or pressure rice fluffed and cooled

  12. Step 12: Mix the finished coconut rice gently and taste; add extra salt only if needed. Return the reserved fried nuts as garnish and serve.

Uses salt (extra only to taste at finish) · cooked/cooled rice combined with coconut, salt and tempering off heat · same 12–15 cashews or chosen peanuts removed earlier
